Today's dinner.! chicken,prawns,french beans

The first dish that i will be showing you how to cook is steam garlic prawns.

This dish is very easy to cook, and simple. The only thing is deveining the prawns can be tedious.







Ingredients.

1. 500g prawns
2. 5 cloves of chopped garlic

Seasoning.

1. 3 tbsp of Chinese cooking wine*
2. 3 tbsp fried shallot oil*
3. 2 drips of sesame oil
4. 1 tsp of salt
5. 1/2 tsp sugar
6. 1/2 tsp chicken stock ganules
7. oyster sauce. (if there is a oyster and scallop sauce that would be a better alternative)
8. 1 tbsp corn starch mixed with cold water
*these ingredients are not necessarily needed.

Method.


first de-vein the prawns.


after cleaning and de-veing the prawns, lay them in a steam tray. mine is just a stainless steel plate.


then make the seasoning, add oyster sauce into a bowl, mix with chopped garlic, then


then add the rest of the seasoning. stir well, then add the mix to the prawns and steam them for 10 minutes. Then dish it out.




The next dish i will be showing you how to cook is steam chicken with light soya sauce. Its a light tasting dish.



Ingredients.
1. 4 chicken drumsticks


Seasoning.
1. 1 tsp salt
2. 1 tsp sugar
3. 2 tbsp oyster sauce
4. 2 tbsp worcestershire sauce
5. 1/2 tbsp light soya sauce
6. 1 1/2 tbsp corn flour mixed with cold water.


Method.



first add the seasoning into a bowl and


when u gradually stir it properly, the seasoning mixture will turn into a light mustard colour.


then pour the mixture into the bowl with the chicken drumsticks, and let the drumsticks marinade with the seasoning. occasionally turn the drumsticks so that they are evenly marinaded. Let the chicken drumsticks marinade for 40 minutes in total.


after being marinaded, place the chicken onto a steaming plate together with the marinade sauce. rub a little oyster sauce on the surface of the chicken. Than steam the chicken for an hour. Then dish it out.
ps: watch out for the water level in the wok, it may be low due to the steaming process.



the last dish for the day is french beans stir fry. This dish is simply to easy.



Ingredients.
1. a hand full of french beans.
2. half a carrot slice horizontally
3. dried prawns
4. 2 tbsp of chopped garlic

Seasoning.
1. light soya sauce
2. oyster sauce

Method.


peel both ends of the french bean together with its fibre ( its would be a bit chewy with the fibre). then cut side ways into 4 parts.


the carrots are cut horizontally, and garlic are chopped into not so fine pieces.


clean the dried prawns under running water for a short while.


then put 2 tbsp of oil into the wok, and when the oil is slightly hot (put ur hand over the wok and you will be able to tell), Then lower the fire, and put in the chopped garlic. Stir fry it for a while till it turn slightly brown before adding the sliced carrots, french beans and dried prawns into the wok. Stir fry the vege for a short while (5 min), then add the soya sauce and oyster sauce. Stir the whole mixture, let it simmer for a minute or 2. Then add some water, approx 1/4 cup. let the whole mix simmer for 4 minutes. Then dish out.
